A great conversation with Sjacco and Andrés on the Tomorrow’s Bites podcast where we shared some thoughts on the question of our time; “how do we feed 9.7 bn people and their 1.3 bn pets, sustainably, healthily and fairly?”
From Sjacco:
“He believes food and technology are inseparable.
From the sharpened stick that tilled ancient fields to precision fermentation creating protein from air, technology has always been humanity’s partner in solving problems.
And now, it’s racing to address one of the biggest challenges of all:
Feeding a global population expected to exceed 10 billion by 2050.
“Food isn’t just food anymore—it’s tech. Every step from farm to fork involves innovation.”
Tony shared how 2017 marked a turning point in his career.
Sitting at his desk, scrolling through emails, he realized something profound:
The rate of change in food technology was accelerating faster than ever before.
From cultivated meat to AI-designed foods, he saw a revolution taking shape.
What stood out most was how these innovations were tackling global challenges:
Reducing arable land use, minimizing greenhouse gas emissions, and creating sustainable food systems for the future.
But the real challenge lies not in innovation, but in adoption.
“The problem isn’t ideas—we have plenty of those. It’s creating systems and policies that allow these technologies to scale globally.”
Tony highlighted that new food technologies, like precision fermentation and gene-edited crops, are critical for food sovereignty in regions like Africa and the Middle East, where traditional food systems can no longer keep up with demand.
“This isn’t just about the US or Europe eating less meat. It’s about giving emerging economies the tools to leapfrog the mistakes we’ve made.”
The future seems to be both exciting and unpredictable.
Are we ready to embrace the technologies that will define the next era of food?”
